The burger

// ingredients

  • 1kg organic, grass fed beef mince

  • 1 small onion, finely chopped

  • 2 garlic cloves, finely chopped

  • 2 tsp Dijon good quality mustard

  • 1 tbsp Worcestershire sauce

  • Small handful chopped fresh parsley

  • 1 large dill pickle gherkin, finely chopped

  • 1 large organic egg yolk

  • 1 tbsp olive oil or avocado oil

  • 8 burger buns (recipe below

  • 4 tbsp avocado oil mayonnaise

  • 2 tsp Dijon mustard

  • 1 onion, diced (any colour of your choosing; I opted for yellow)

  • Lettuce leaves

Place all the ingredients for the burgers in a large bowl. Season and mix well. Cover and chill in the fridge for 1 hour.

Then using wet hands, shape the mixture into 8 burgers.

Fry in oil on medium heat to your desired level.

  • 3 1/2 cups bread flour

  • 1 cup m water, lukewarm

  • 2 tablespoons butter, at room temperature

  • 1 large organic egg

  • 1/4 cup sugar

  • 1 1/4 teaspoons sea salt

  • 1 tablespoon instant yeast

Preheat oven to 200c

Mix above ingredients into bowl of stand mixer fitted with paddle for 5 minutes

Then apply cling wrap to bowl and leave for 2 hours.

After 2 hours shape into 8 round balls on a baking sheet, brush with egg wash and apply sesame seeds if desired.

Put into preheated oven for 15 minutes.

Allow to cool.
