Chocolate Sphere
Like a giant Ferrero Rocher, but better.
A beautiful dessert for your next dinner party!
// find recipe below
Makes: 8
Prep time purely depends on experience with working with chocolate. For a beginner I would allow for at least an hour to create the spheres.
// ingredients
1/2 cup dark chocolate
100g unsalted butter, melted
1/2 cup white sugar
2 organic eggs at room temperature
1 tsp vanilla
1/4 cup cocoa powder
1/2 tsp baking powder
1 cup almond flour
1/4 cup hazelnuts, roasted
For Spheres
2 cups good quality dark chocolate
8 hazelnuts, roasted
// method
For cakes:
Preheat oven to 180C/350F (160°C fan).
Butter and line a 8 hole muffin tray.
Melt chocolate and butter in microwave in 30 second bursts, stirring in between until smooth.
Whisk in sugar. Add eggs and vanilla, whisking well until combined,
Switch to wooden spoon. Add cocoa powder, baking powder and almond meal, fold through until just combined.
Pour batter into pan, bake 45 min until top has thin crust and skewer comes out clean, not smeared with batter.
Cool cake in the pan for 10 minutes, then remove sides.
Cool completely on rack before carefully removing base.
For spheres:
Melt chocolate and butter in microwave in 30 second bursts, stirring in between until smooth
Paint the silicone half sphere mould with the melted chocolate using a pastry brush.
Allow to set in fridge for 20 minutes
and remove the chocolate spheres from the mould
Place prepared cake in 8 of the half spheres
Use a small amount of melted chocolate to attach the remaining half spheres to create a complete sphere.
Using a piping bag cut a small opening and drizzle some of the extra chocolate on top, whilst wet apply one hazelnut to each sphere.
enjoy!
